Roasted!

These beauties are ready for roasting! Just a few minutes before they are done I will add heaps of freshly chopped garlic then finish off with freshly grated Parmigiano- Reggiano! So goooooood! If you think you don't like cooked carrots (like I did) give them another try, it's all about texture - no mush allowed!
Cooking Tip: The simplest way to improve your roasting game is to pre-heat your sheet pan! When you turn the oven on to pre-heat, throw the pan in the oven too... this cuts down on cooking time & also gives that great sizzle sear right from the start! And remember, if the temp isn't over 400 you aren't roasting!
